Happy Birthday Mom!

Happy Birthday Mom!!!!

Today my foot felt much better. Thank you for all your kind comments!

For tonight, I have a simple healthy dinner. Greek Quinoa


Ingredients:
  • 1/2 Red Onion
  • 2 Garlic Cloves, minced
  • 1 Zucchini
  • 1 8 oz can of Black Olives (whole pitted)
  • 1 cup sliced Mushrooms
  • 2 tbsp Canola Oil
  • 1 tbsp (a few shakes) Red Wine Vinegar
  • 1 8 oz can of Garbanzo Beans
  • 1 cup Quinoa
  • 2 cups Water
  • Salt and Pepper to taste


Optional Toppings:
  • Greek Dressing
  • Italian Cheese Mix ( a mix of Mozzarella, Provolone, Romano, Asiago, and Parmesan cheeses) Feta would also be delicious (I just didn't have any).
1. Rinse Quinoa. In a pot, add quinoa and water. Bring to a boil, then cover and simmer for about 15-20 minutes.



2. Meanwhile chop your vegetables. In a fry pan, add 1 tbsp of Canola Oil, Red Onion and Garlic. Let cook through until the Red Onion starts looking translucent.

3. Add sliced Zucchini and Mushrooms. Let saute for about 5 minutes, tossing the vegetables occasionally.


4. After the Zucchini begins to look translucent, add the Garbanzo Beans and let simmer until the Quinoa absorbed all the water or 5 minutes.




6. Pour the Quinoa in the fry pan with the vegetables and add your olives.



7. Serve and top with cheese and dressing if desired.
