Weekend Recap

This past weekend, the roomies, some PT friends and I went to Shenandoah National Park for some crisp fresh fall air.

And crisp it was! I think it got down close to 40 degrees Saturday night. Thankfully we had the right gear, a warm fire, some hot chocolate and s'mores!



This trip we stayed at Big Meadows, one of the more popular campgrounds in the park. Since this was a short one night trip, we arrived right at check-in and set-up camp before venturing out on a short hike.



This trip we decided to hike Lewis Falls (3 miles) on Saturday and the shorter (2 mile) hike on Sunday.



For dinner, we had hamburgers, veggies, corn and s'mores.



Our friend, Megan, brought veggies in tin foil. GREAT IDEA. We put the tin foil right on the fire grate and they cooked right up!



Sunday, we woke up early and had pumpkin chocolate chip muffins and hot coffee.

I made the muffins on Friday using Trader Joe's Pumpkin Muffin Mix and mini Nestle Toll House Chocolate Chips. YUM! I only wish they were bigger!
