Garbanzo Eggplant Quinoa

Can you believe that today is the Winter Solstice? or even crazier is that Christmas is a mere 4 days away! This year flew by!

Tonight I bring you a spur of the moment recipe. I bought an Eggplant at Trader Joe’s and knew I had to use it tonight. Looking into our sparse cabinet, I quickly decided that a few ingredients would have to do. 20 minutes later I had a fantastic meal that I just have to share with y’all.

Garbanzo Eggplant Quinoa

Ingredients:

  • 1 medium Eggplant
  • 1/4 cup chopped Onion
  • 2 tbsp. Canola Oil
  • 1 16 oz. can of Garbanzo Beans
  • 1 cup Quinoa
  • 2 cups Water
  • 1/3 cup Trader Joe’s Goddess Dressing

Directions:

1. Rinse Quinoa. In a pot, add quinoa and water. Bring to a boil, then cover and simmer for about 15-20 minutes.

2. Meanwhile cook the Eggplant in 1/2 inch cubes. In a fry pan, add 2 tbsps. of Canola Oil, Onion and Eggplant.

3. Sauté on high for about 10 minutes or until Eggplant starts to brown, add the Garbanzo Beans and let simmer until the Quinoa absorbed all the water or 5 minutes.

4. Pour the Quinoa in the fry pan with the Eggplant, Onion and Garbanzo Beans. Add Goddess Dressing and mix well.

5. Serve and enjoy!
