Swedish Meatballs and Cauliflower-mash

Is one of my favorite dinners, because it is soooo easy.

Jay and I often pick up Swedish meatballs from IKEA for those nights when no one feels like cooking. They are easy to make (450 degrees in the oven for 15 minutes) and oh so tasty.

If you accompany these little suckers with Cauliflower-mash it is like you are eating them with mashed potatoes, but you feel better afterward!! :)

Cauliflower-mash is just as easy to prepare. Chop the cauliflower into medium size pieces (or trees as my little brother used to call them). Throw them in a small pot with less than an inch of water or chicken broth and turn up the heat to high. Let the broth (or water) boil and the cauliflower steam. Once the cauliflower is tender, mash it with a potato masher until it has the consistency of mashed potatoes. You can add a little salt and pepper or cheese for seasoning.

Yum! Yum! Yum! Look at the cauliflower!
