This weekend Jay commented that we haven’t had fish in forever. Well as most women can say, it is very refreshing to hear a request from our man friend that is healthy. So without hesitation, I bought Tilapia at the grocery store.
For Tilapia, I simply grilled it in a pan in a little olive oil with garlic salt and basil. Mmmhmmm delicious!!
But, of course no dish is complete without some healthy sides. Normally I prefer millet with fish, but alas it’s summer so I opted for quinoa instead. Plus, who doesn’t love extra quinoa on their salad?!?!
The second side dish was inspired by a Cooking Light Recipe from earlier this summer. Of course I didn’t exactly follow the directions and made it MY way.
- Simply rinse all veggies while heating olive oil in a pan with some garlic.
- Lay asparagus in the pan, flip them once they start to really sizzle.
- Transfer asparagus into serving dish and top with feta.
- Repeat until you have cooked all the asparagus.
- I usually cook the tomatoes with the last batch.
Ta-daaa! And that’s dinner.
