Tonight I set out to make a recipe from a cookbook. Instead I used it only for inspiration.
The original recipe was similar to this one, but mine was not a side, it was an entree.
I sauteed some chicken with onion, while cooking millet along side it.
I rinsed frozen spinach and mixed it all together in a 9 x 12 baking dish. Added some Parm and let it bake for 15 minutes at 375.
After 15 minutes, I stirred in the asparagus and added some more Parm, before placing it back in the oven for 15 more.
Another 15 came and went, and I had a delicious dinner that was easy and time well spent!
Ingredients:
2 cup Chopped Chicken
1/4 cup chopped Onion
2 tbsp Olive Oil
1 cup Millet
2 cups frozen Spinach
2 cups Chicken Broth
2 cups chopped Asparagus
1 cup Parmesan Cheese
1. Preheat oven to 375 degrees. Chop chicken into cubes and saute on high heat in olive oil with onions.
2. Rinse Millet. Toast millet in pan on high heat, flipping every few seconds. After a minute or two, add 2 cups of Chicken Broth. Bring to boil and then let simmer for 5 minutes.
3. Rinse (thawed) spinach and add to millet. Let simmer for 5 minutes.
4. Rinse and chop asparagus. Put to side.
5. Once chicken is cooked, move to a 9 X 12 baking dish. Add millet and spinach on top. Sprinkle on top 1/2 cup of Parmesan cheese.
6. Bake for 15 minutes.
7. Add asparagus and 1/2 cup of Parmesan cheese and stir. Bake for an additional 15 minutes.
8. Serve :) and enjoy!
